Nature of Work

Under general supervision, this lead worker position will be primarily responsible for the daily operations within the primary areas of assignment of kitchen and custodial duties. The main purpose of this position is to coordinate the kitchen operation while following all health and safety regulations including cleaning, sanitizing, food ordering and receiving, storage, production, service, and distribution of food in a timely manner. Prepares, cooks, bakes, and serves a wide variety of foods such as vegetables, fruits, meats, soups, breads, salads, and cereals in large quantities according to specified recipes and NSLP (National School Lunch Program) compliant menus, special dietary or nutritional restrictions, and numbers of portions to be served through the use of cafeteria equipment and cooking/baking processes. Maintain cleanliness and complies with food sanitation requirements by properly handling food and ensuring correct storage by following Hazard Analysis Critical Control Point (HACCP) and other sanitation principles in food handling and equipment use. Cleaning the kitchen before and after meal preparation, washing, sanitizing, and putting away dishes, sweeping, mopping, and emptying trash daily, inspect equipment, kitchen appliances, and work areas in order to ensure cleanliness and functional operation. Maintains food, beverage, and equipment inventories and order supplies as needed to ensure all assigned areas are adequately cleaned and stocked. Compiles and maintains daily resident meal counts, production records of food use, and other records as required, including maintaining computerized meal accounts, and verifying meal accountability at point of service - Primero. Complete, and maintain, daily, weekly, and monthly reports as required. Determine food requirements including variety and quantity of food for preparation and to assemble supplies and equipment needed for daily cooking activities. Maintain strict adherence to all food safety regulations for proper handling and storage of food. Communicates any maintenance and upkeep issues to supervisor relating to all kitchen equipment. Log all duties completed. Monitors temperatures of food, refrigerated equipment and other food cleaning or preparation equipment. Keeps accurate production records and all necessary logs, maintains the food and kitchen supplies inventory. Will perform custodial duties to include cleaning, washing, and sanitizing. Acts as lead worker over kitchen personnel in specific areas of kitchen operation, and by performing, assigning, and monitoring kitchen work. Instructs kitchen personnel in use of kitchen equipment and cleaning methods and provides efficient and effective methods of maintaining work area. Train and provide work direction to others. Will be responsible for communicating with food vendors to make weekly and monthly orders. This position will require some local travel to pick up food orders and supplies. Custodial duties include performing routine manual work at the required performance level, cleaning in and around facilities, including maintaining cleanliness and orderliness in assigned areas. Any other assignments pertaining to the kitchen and custodial duties that may not be specifically listed. This position will be required to acquire and maintain a valid Driver’s License, as well as a ServSafe Food Handler's Card.

Minimum Qualifications

Training: Graduation from high school or equivalent.

Experience: Four years of full-time or equivalent part-time paid experience in the area of assignment, one year of which must have been in a lead worker capacity.

Substitution: Coursework from an accredited college or university may be substituted for the required experience on a year-for-year basis for up to four years of experience.
